Sauteed Shiitake Mushrooms

2 tsp. avocado or olive oil

12 oz shiitake mushrooms, stems removed and caps sliced thin

1/2 cup onion, diced

1 tsp. dried thyme (optional)

1/4 tsp. salt, or to taste

Instructions

In a pan over medium heat, heat the oil, then add the mushrooms, onions, and thyme. Saute about 7 minutes, stirring occasionally and adding water if needed to avoid sticking, until mushrooms are soft. Transfer the mushrooms to a bowl.
